Buddha Bowls

A Colourful Experience 

A friend of mine introduced my to one of the most glorious, healthy meal options. Introducing: The Buddha Bowl.  The buddha bowl is chalked full of vitamins. The richer and more varied the colour is, the richer and more varied your vitamin intake will be. The great thing about buddha bowls is that you can change up the ingredients depending on your mood. Here are some great recipes to get you started.

Rainbow Buddha Bowl 

Ingredients:

  • Rice Noodles or Brown Rice
  • Bok Choy
  • Onions (diced)
  • Orange Pepper
  • Mushrooms (sliced)
  • Tomatos (diced)
  • Corn
  • Black beans
  • Garlic
  • Cilantro
  • Pad Thai sauce
  • Avocado Oil (or oil of your choosing)

Instructions:

  1. Soak rice noodles for an hour/cook brown rice.
  2. Cook black beans separately.
  3. In a wok, pour in 1 tablespoon of avocado oil.
  4. Chop up your ingredients.
  5. Stir fry bok choy, onions, peppers corn, garlic, and half of mushrooms until cooked.
  6. Add pad Thai sauce to wok and let simmer for 3 minutes.
  7. Place rice noodles or brown rice in a bowl and top with cooked ingredients and the remainder of uncooked ingredients.
  8. Top with cilantro.

Salmon Teriyaki Buddha Bowl

Ingredients:

  • Rice Noodles or Brown Rice
  • Salmon
  • Onions
  • Tomatos (diced)
  • Garlic
  • Green Onion (diced)
  • Avocado
  • Orange Ginger Sauce
  • Chopped Peanuts (optional)

Instructions:

  1. Soak rice noodles for an hour/cook brown rice.
  2. Bake salmon in orange ginger sauce .
  3. In a wok, pour in 1 tablespoon of avocado oil.
  4. Chop up your ingredients.
  5. Stir fry onions in wok until cooked.
  6. Add half of diced tomatoes and half of green onions to wok.
  7. Add Orange ginger sauce to wok and let simmer for 3 minutes.
  8. Place rice noodles or brown rice in a bowl and top with cooked ingredients and the remainder of uncooked ingredients.
  9. Top with chopped peanuts.

Tropical Buddha Bowl

Ingredients:

  • Rice Noodles or Brown Rice
  • White Fish
  • Mango
  • Avocado
  • Carrot
  • Cilantro
  • Pineapple Sauce
  • Lime

Instructions:

  1. Soak rice noodles for an hour/cook brown rice.
  2. Cook white fish separately in pineapple sauce.
  3. In a wok, pour in 1 tablespoon of avocado oil.
  4. Chop up your ingredients.
  5. Place rice noodles or brown rice in a bowl and top with white fish and uncooked ingredients.
  6. Pour pineapple over bowl.
  7. Top with cilantro and squeeze lime over bowl.
